Mou Shu Pork made easy. Forget complicated, hard to make pancakes you get at the local Chinese restaurant. Just substitute flour tortillas.

12 ounces lean boneless pork loin, sliced into 1/4 inch thick strips
1 onion thinly sliced
1/4 cup minced fresh ginger root
2 cloves garlic minced
4 cups thinly sliced bok choy or green cabbage
10 large white mushrooms sliced
2 cups bean sprouts
1/4 cup sake or dry sherry
3 tablespoons hoisin sauce
2 tablespoons soy sauce
8 flour tortillas


Directions:
Heat a large skillet over high heat until very hot. Add pork, onion, ginger, and garlic. Cook and stir until pork is brown and onion is tender (about 5 minutes). Mix in bok choy and mushrooms continue to stir fry for about 5 minutes (or until mushrooms are tender).

Add bean sprouts, sake, hoisin and soy sauce. Cook another 5 minutes.

Place tortillas in oven for 8 minutes at 325 degrees until warm or heat in microwave.
